Toast pandesal halves topped with flaked spanish style sardines. Local brands of canned spanish sardines is not only economical but also delicious. Top with mayonnaise and a sprinkle of pepper flakes before serving.

Fresh-from-the-oven pan de sal spread with ground tomatoes sauteed in olive oil and melted mozzarella cheese, topped with crunchy dried fish and finally garnished with basil — it’s like a classy mini-margherita pizza with anchovies, only with an equally satisfying filipino twist! Yum! 🙂

This post instantly made me crave for pan de sal. Here’s my pan de sal comfort-food combo: Cook instant pancit canton (I prefer the extra-hot variety). Place on a bowl. Top with sunny side-up egg (with crisp edges but still a li’l runny yolk) and cocktail hotdogs (the red variety for color). Slice pan de sal, fill with butter and liver spread. Toast until warm and golden, and the butter has melted and fused with the spread. Serve with the pancit canton with toppings.

I think this will be my breakfast tomorrow. Not exactly healthy but boy, this will make my day!
